Sztrapacska – Halušky Noodles
Sztrapacska recipe for making Halusky noodles. This traditional Slovakian dish is served with bryndza cheese and pancetta bacon for a
comforting meal. You can substitute bryndza with grated Pecorino Romano, which brings the same intense sheep's cheese flavour, or a salty
feta cheese.


Ingredients
300g potatoes
200g flour
200g sour cream
100g pancetta bacon

100g sheep's cheese (bryndza,pecorino romano or feta)
3 eggs
Directions
1. Dice the smoked bacon and fry until crispy in a pan. Remove the bacon bits and set therendered fat aside.
2. Peel the potatoes, grate them, and mix them with eggs, flour, and a pinch of salt to form thedough for the noodles. Add a little water if necessary.
3. Boil a large pot of water. Pass the dough through a specialist dough grater, the back of a cheesegrater, or a colander with large holes. Once the noodles rise to the top, remove them with aslotted spoon. Mix them with the bacon fat, the grated sheep's cheese and sour cream.
4. Place in a greased fireproof bowl and bake at 200 degrees Celsius for 20 minutes. Remove fromthe oven and sprinkle with the toasted bacon bits.
